Flank Steak with Olive Sauce

Flank Steak with Olive Sauce

  • 1kg Darling Downs flank

  • Olive Oil

  • Salt and Pepper

  • 1 cup olive oil

  • 3 cloves garlic

  • 3 sprigs rosemary

  • 1 cup green pitted olives, grained and crushed

  • 1 tsp chilli flakes

  • 5 spring onions, grilled and finely chopped

  • 1 tbsp honey

  • 2 tbsp red wine vinegar

  • Salt and pepper

  • Feta, to serve


Step 1

Very lightly rub oil on steak, not enough to drip off, just enough for the seasoning to stick. Season liberally with salt and freshly ground black pepper

Step 2

Preheat the grill, and place the seasons steak down. Turn a few times during the cooking process until an internal temperature of 53-54 C / 128-130F. Remove from grill and set aside, loosely covered with foil.

Step 3

Heat olive oil gently then add whole garlic, rosemary springs and continue to heat. When the rosemary sizzle, turn off heat and steep for 10 minutes, before removing rosemary and garlic. 

Step 4

Pour the infused oil over the crushed olives. Add chili flakes and grilled spring onions. Melt honey and vinegar together in a small pot. Pour into olive mixture, add salt and pepper to taste and feta at the last minute.

Step 5

Once olive sauce is ready, pour over the flank steak & serve!
